What benefit is there to using an older hen?

My darkest egg comes from a 3 year old hen and I wondered if there are any benefits to her egg compared to a 1 year old.
why breeding from a oldenr hen is better than breeding from a younger one .
the olden hen is proven or has proven she has some qualities like health ,longivity ,resistance to deseases etc...............
Example if the hen is not healthy she will no live for a long time .
young hens they haven t proven thim selves if they are worthy or not .
best prictice is to breed older hens with a young rooster,

I thought maybe quality of the egg itself would be better in older hens.

But this makes sense.
After a couple of years, the older hens show what qualities they actually have. Health being so important.
They are also calmer and used to handling, making them my favorites.

I hatched several of her eggs and
the chicks are in the brooder waiting to be sexed.
