I think you should get a good formulated flock raiser or all flock, with OS and grit on the side and leave it at that. That will be the cheapest way to feed them. I would not put out more than a handful of scratch as a treat, they really don't need it at all.
Mine stopped laying this winter too, and are just now starting back up. I'm getting 2-4 eggs a day out of 7 layers. I don't add light. Have you thought about doing that? I used to add supplemental light and my girls laid eggs all year round, but this year I decided it is more natural for them to take the break.
Thanks for introducing yourself, your family, and your flock to us! I have to ask as it caught my attention- how do you split your wood? Gas splitter or by hand? Alot of people here use gas splitters but we're pretty biased to just an axe, a maul, and a wedge. You also mentioned enjoying hunting/fishing- have you ever got into tanning any of the hides from your hunts? It's a great hobby and provides some nice craft material, and puts some of that post-hunt waste back to good use!
