Is it possible to bring back the true looks of the breed?

Hi Robert, I can remember feeling similar to yourself 13 years ago when I revisited my child-hood hobby of chicken keeping -- there are so many breeds now! The best piece of advice is to ALWAYS START WITH GREAT BIRDS. All your hard work, money, and effort will be the same if you have poor quality or great quality birds, so you might as well work with the best genetics and stock you can find.
Having said that, What are your goals for this project? If you just want Sebrights that conform to the standards of perfection then purchase quality sebrights and work with them... don't bother with mixed breeds. When you see Sebrights in the show ring you can tell instantly they have completely different personalities and demeanors from pet quality sebrights. Personality and demeanor are also inherited traits that breeders have already been working with.
There's already been A LOT of hard work done with genetics, so there's no reason to bog down the spirits of new enthusiasts by reinventing the wheel. Look around to see other hobbyists' project to see if they are the same as yours... it can be a group of you working together on the project... i.e. The creation of Satin Chickens from Silkies took a decade and several of us from California sharing our genetic pools and resources to create a standard of perfection that will be accepted by the national poultry associations.
If you'd like, you can alway help me bring single lacing to Modern Game Bantams. I'm using Sebrights (buff, golden, and silver) as well to do this.
Best of luck!!
