Seems kind of Lou-ish to me just based on comb and waddles but it also seems like they are big enough that it would be displaying roo behaviors. How old are they? Do you have a pic of this chicken standing more upright? Or could you take a pic of hackle feathers or tail?

I had one that I thought was a male, however she was just a really weird ugly heinz 57 chicken. She had to have some mediterranean breed in her because she had a really upright stature, was pretty flighty but was in fact a She.

Cornish cross sounds familiar, I bought them at tsc and that may have been the feature bird of the week

Lou is a Cornish Cross Roo. He is a meat bird. He will start having troubles walking here in a few more weeks. I had a friend whose girlfriend wouldn't let him kill the lone surviving Cornish Cross after a raccoon attack. Tubs the CC lived to be about 15 months old. He could barely walk he looked like a turkey he was so big. He died of natural causes. But it was sad to see him live that long because he looked so miserable.
 
That explains why he / she always takes only about two - three steps at a time and then sits down
I will have to process him in a week or so

yep. When we raised ours we butchered at 7 weeks with one batch and 8 week with the other and we had some 6 to 8 pound birds after they were processes. Just make sure to withhold food for the 24 hours before you process or it will be messier.

Roo tendencies are standing really upright, they like to thrust their manly chests out a bit, they preen a lot, strut, herd a bit...at a certain age start to make noises that could be attempts at a crow I think it sounds initially like a bit of a bark. I know that this is not always true of every bird but some of the things that you can observe. Sometimes you have a bossy hen too! :)
