I went out to check on the birds and give them their evening meal. I noticed that our pet rooster wasn't out with everyone else. Upon looking for him I found him hiding under the shed. This is odd because he is top dog around the coop. He may be the smallest but he is the toughest of the bunch. When I finally got him out I noticed he was bloody. Looking at how I was going to get him out and let him heal one of the other rooster started working on him again. In a moment of "LEAVE HIM ALONE!" I swung the stick in my hand and roled him across the coop. Upon realizing what I had done I decided it was time to dress out the other 3 roosters that were freezer bound anyway. After a mess of catching birds and doing the deed I have 4 ready for the process of getting in the freezer. I took me about 2 hours but it was all over and done. It went very smooth for my first time, I think. I had read the process several times before as well as processing game for years. No I didn't keep some of the things that others say they do, maybe next time. Not really at all what I had planned for Christmas but I wasn't going to waste the first one nor was I going to make a mess for only one. My plan is to freezer 3 and taste one to see if it will be worth my time to get more for freezer stock later.
