It sounds gross but...can you eat duck eggs?

    I have a female duck. Shes still young and not laying eggs yet. And I was wondering if you can eat the eggs. Also what do they tast like? I heard they are high in b-12.

    It is not gross it is normal. Yes, you can eat duck eggs. They are richer with a larger yolk and thicker white but taste similar to chicken eggs. Most of the world eats duck eggs except in the US. They are available overseas in grocery stores. They are supposed to be great for baking but I don't bake [​IMG]
    I have to admit that I was a little freaked out at first and it took me a while to eat them regularly. Not sure why since its just an egg and I eat my chickens eggs. If you have males just collect your eggs and refrigerate in case they are fertile. Putting them in the fridge will not allow any development.

    I love duck eggs....I wouldn't tell my chickens but I kinda like them better! [​IMG] They are firmer and have a bigger yolk, and I love the yolk! My whole family eats duck eggs...

    We have Pekins and Mallards and love eating their eggs - when we can find them! I haven't noticed any major flavor or texture difference in duck eggs and chicken eggs. That said, I have made pound cakes with the duck eggs and they are some of the best pound cakes I've ever made so maybe the eggs are a bit richer.

    I've learned to be careful not to overcook the duck eggs. Like in scrambled...over cooking can make them a bit rubbery. I might add alittle more milk to my egg mix for scrambling. Other than that, I can't tell any difference.

    I love duck eggs! Actually, I like their yolks better than chicken eggs, but I feel that their whites are a little more rubbery. Still grea to eat though! [​IMG]

    Like tdgill said, maybe I'm just overcooking them a little. [​IMG]

    We just started getting eggs from our hen. (Three days ago) Had tried purchased duck eggs before and the were quite large, and had a strong taste. They do, indeed, get rubbery if you overcooked them. Our eggs taste better than the store bought chicken eggs.....according to my husband (who I thought would never eat duck eggs, and now doesn't want chicken eggs anymore). Our eggs didn't seem to have the strong taste that the ones we purchased did previously. Have heard what you feed them has quite an effect on how the eggs taste, so maybe that is why our eggs do not have the strong taste.

    I had duck and turkey eggs from a local farm one time. I loved the turkey eggs - they were HUGE and tasted exactly like chicken eggs to me. I thought their duck's eggs were stronger in flavor than chicken. Maybe their ducks ate more free range and pond stuff. My ducks eggs are a favorite of the family!

    Duck eggs are a bit rich for me to eat straight up, but they ROCK for baking! I always keep a half dozen or so in the fridge for that purpose, then the pigs, chickens, and ducks get the rest. The critters seem to prefer duck eggs over chicken eggs (even the chickens).
     
  10. Growing up they were esp. highly prized by women who baked. I remember the dough that included ducks eggs being a beautiful yellow. Once baked, the bread and rolls looked and tasted richer. I love baking and bake for my family and co-workers often. My ducks just started laying last week - looking forward to using the eggs.
