Yum! We made these tonight.. they actually were pretty good! The whole family like them and had seconds,..so i suggest giving them a try. :)

5 lbs potatoes, sliced and boiled. (we didnt boil them fully.. they still were a little bit firm.. because we didnt want them to overcook in the crockpot and fall apart) *we sliced them in rounds .. about 3/4 to 1 in thick*
1 lb package bacon, cooked and crumbled (we used a bit more than a lb.. :D..but not by much..)
16 oz Monterey Jack cheese, shredded (we used 8 oz montery and pepper jack mix.... and another 8oz of a 3-4 cheese blend mix..) Use whatever cheese you like. :) *of course we also used more than 16 oz cheese too... *
1 package of italian dressing, made up. (we used zesty italian mix... )

1: After potatoes are boiled, ( drain and let them dry a bit). Layer the potatoes, bacon, cheese and repeat in that order until all are used. (ending on top with bacon, cheese)

2: Pour the dressing on top.

3: Cook on low crockpot for 3-4 hours or until heated to desired temperature.
