It's Fall Soup time!

Southwest Turkey Tortilla

1 lb cooked turkey (great for leftovers)
1 onion, minced
2 tb oil
2 tsp garlic, minced
1 can diced tomatoes
1 can whole kernel corn
1 can black beans, rinsed and drained
2 Tb chili powder
1 tsp cumin
1 tsp coriander
S&P to taste
3 tortillas, cut in 1/2" x 1" strips
Saute onion and garlic in oil. Add diced tomatoes and brown slightly. Add spices and cook a few minutes more. Add water, and all other ingredients. Simmer 15 minutes.
 
I'm actually eating Lentil Soup. Same recipe can be used for Vegetarian Split Pea Soup if you sub split peas.
Saute in a couple TBLSP olive oil
1 c chopped onions
1 c chopped celery
1.5 c chopped carrots
Add
1 lb lentils
1/4 to 1/2 tsp ground thyme or to taste
8 c water or half strength vegetable broth
bay leaf
pepper and salt to taste
Bring to boil and then turn down heat, cover and simmer for 35-45 minutes til lentils are soft.

I tried making a different soup in my pressure cooker last night, without sauteing the onions/celery/carrots and it was not very good at all but this one is a success.
