Jam Making Thread!

I also do not agree with the turn upside down method. If you want to prepare these and guarantee they are food safe for storage you need to do a hot water bath on them and follow canning guidelines OR a pressure canner. Make sure you are using the most up to date info NOT old school leading to salmonella/ botchelism etc... Just because a cap pops does not mean the bacteria has been killed off from inside jar/lid etc...

Making and canning your own blueberry jam is so easy. And this blueberry jam is incredible. You must preserve this jam in jars.Leave the jars in the dishwasher on "heated dry" until you are ready to use them. Keeping them hot will prevent the jars from breaking when you fill them with the hot jam.

yesterday I made drunken peach oh my gosh so good...
lemon curd...
cranberry curd.
apricot amaretto..
jalapeno mint...mmhh but didn't set.
strawberry rhubarb..
thimbleberry...
gotta cook up my bags of saskatoons for jam..

I have done strawberry rhubarb...is still in the freezer from last year very succussfull,
but for me they use up freezer space...but do recomend for the less sugar...

We made lovely jam last year. But it all went mouldy - I just don;t want to end up that way again. Do you have to freeze the jam if you are intending to keep it in jars for months? Mine were made around September but were off by christmas. I did steralize the pots and I put the wax on the top. I was really upset becuase it was a wast of time and effort and money of course. Rhubarb and ginger jam was lovely and I would do it again if only it would last! Can you make jam without sugar?

hello oesdog...trying to understand and help...
where was the jam from september -december fridge/freezer shelf..
if it was on the shelf..it is needed to be canned..
I think i had only made..jam about 2 times before this year..
but now Have an Amazing jam supply...You can use any pot to can them
just stick in the pot cover with water come to a rolling boil and time for 10minutes.
Personally I don't think I will ever do freezer jam again...is just so much easier
no to have to worry when it is canned...

Some people prefer the taste of freezer jam. It is a matter of choice, but you should either freeze or can it to preserve it. My question is to jam makers, has anyone tried the low sugar or no sugar added pectin? How is the taste compared to regular?

Ours were stored in strealized jam jars on a shelf in the cool store. They had the wax ring on the top and screw down lid/ or rubber sealed lid but all went mouldy on the top. Someone said scrape the mould off about an inch down and it will be ok. - It was not it was foul and I ended up throwing the whole lot.
I just don't want to wast all that again and I have some lovely fruit in the garden this year. I have never in my life heard of frozen jam? I didn;t know jam froze -

This is the third time I have asked this question and the subject keeps getting changed and I never get an answer. PLEASE, has anyone tried reduced or no sugar added pectin?
