This is my FAVORITE burger and over the years I have tweaked it to Mushroom perfection...
If you like a regular mushroom swiss burger, you'll love my Mondo Mushroom....
You'll need:
Portabella Mushroom Caps
Ground Beef or Turkey
Swiss Cheese Slices
Asiago grated Cheese
Eggs
Seasonings
Bread crumbs
Take the mushroom caps and cut out the thick stems, discard. Take a spoon and gently start to scrape out the gills, down to the white tougher part of the cap. Set aside.
Get your ground meat, and add your mushroom cap scrapings, some grated asiago, salt and pepper, an egg, some bread crumbs. Smoosh together with your hands mixing well.
Take a LARGE ball of meat mixture and smoosh it into the Portabella cap, fill the cap but don't overfill.
You're going to grill the stuffed mushroom caps, first on the meat side, for the longer amount of time and then on the cap side.
When done turn over and top with sliced swiss on cap side.
Get your bun ready and have another slice of swiss for your meat side. Put the whole shabang onto bun.
I ususally put Mayo on both sides of bun.
Burger can be made on your stovetop, but comes out 100% better on the grill.
