It's SSSOOOO good! Here's the recipe with my alterations for when you resume eating solids... the olive oil cuts the fat content that the butter just ruins. I was so impressed I made a second batch immediately for husband to take in his school lunches. Not many healthy menu choices at college.
Preheat oven to 350 F. Use 9x5 bread pan, or something close. I used a 13x9 casserole pan because I don't have bread pans yet.
Into a large bowl:
2 cups of flour (I used all purpose to use it up, switching to minimally processed organic wheat flour)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon organic raw sugar
Into a blender:
3 over ripe Bananas
1/2 cup canned fruit medley (the one with pineapple, peach, ect) OR 3/4 cup applesauce... the fruit is the sugar, you don't need to add the tablespoon of sugar.
2 Eggs (I used duck eggs)
1/2 cup Olive or Peanut oil. Any sort of minimally processed natural oil will stand in just fine. Or butter if you must.
1 - 2 Teaspoon of Cinnamon
1 1/2 teaspoon Nutmeg
Blend contents in blender until smooth. Stir dry contents. Add liquid mixture to dry, stir thoroughly. Pour into greased up pan.
Bake for 1 hour 20 or 30 minutes, check center with toothpick. Like brownies... when it comes out clean you're about done. Look for brown edges and a golden top.
Let cool for 10 minutes, flip over onto a plate or rack.
My dad started this substituting thing with cooking... he makes bread and brownies and all manner of things without butter or actual sugar, using fruit sugar "whole" I guess you could say.
Oh you know what? Throw a 1/2 cup or so of chopped walnuts in there too!
