Jumbo Coturnix Quail - Learn Me A Few Things

That is one thing I want to try! I want to gather a bunch of eggs for pickling. We never used to be able to sell our bantam eggs too well and it took plenty of them for cooking so we used to wind up just pickling them with beet slices to get them nicely reddened. I'm thinking of a spicy pickle mix for my quail eggs.

The meat flavor...is hard to describe. I know everyone says just about any bird or anything for that matter tastes like chicken but quail has its own flavor. I usually marinate them and toss them on the grill. Heck...most of what I eat winds up bbq'ed.

When we get grouse, hubby cubes up the breast meat, tosses in seasoned flour, and pan fries it with onions and mushrooms. Served over rice.

I think you made the right choice for the first time, Miss P... the Bobwhites are a lot more skittish and delicate, and, well, Buttons are appetizers.

(NO! I wouldn't eat my Buttons!!!) I don't know about the other varieties, but I've pretty much come to the conclusion that the Coturnix are first choice for meat and eggs, as well as first-time raisers.

I'm toying with the idea (shhhh! don't tell hubby) of trying to hatch some Chukars for that purpose, though...are they good?

Are those Valley quail? Gambel? I'm not familiar with all the breeds yet... how big are they when they mature (weight)?
 
These are Gamble's.. they mature at 8 to 10 ounces, about the same size of bobwhite, Or I should say northern BW I've got Butler Bobwhites that will go 18 to 22 ounces
