Start with chicks, for a couple of reasons. You can get sexed pullet chicks. You can't get sexed eggs. I've had hatches that were 80-100% cockerels. We eat the extra males, but my kids have grown up with that. There are very, very few homes available for excess cockerels. If you have a problem with someone eating your cockerels then hatching eggs is definitely not for you.So I guess the next Question would be "Egg vs Chick?"
I kinda like the idea of my girls seeing the whole process of the chicks hatching but the Surprise Roo or two, I'd feel bad having to re-home them.
Starting with chicks means you have actual birds from the beginning. Shipped eggs are a gamble at best. You are doing well with a 50% hatch rate. Then you are lucky if 50% of those are male. Having none hatch isn't uncommon either.
