If you're not familiar with butchering, I really like booker81's posts. I'm not sure she's still active on the board, but even the info from a few years ago is good.
Thanks, I had found it a few hours last night after posting this... Weve got several months before we are ready to start another batch, what i have now in the bator is barnyard mutts, mostly to replace older hens in my flock, but we are wanting to really start raising meat birds that we can also use as egg layers if we choose... He wants to raise quail but I told him Ive never had it and wanted to try it first, darn it if he didnt go out this morning and shoot two out of a flock that likes to hang out sometimes on our property..Got them processed and waiting in the fridge til tomorrow.
