Katy's Pumpkin & Black Bean Soup :)

1 large can of pumpkin
1 pound of bacon chopped (not cooked)
1 onion –diced
1 c of white wine
2 cans black beans - rinsed
3 cans chicken broth
1 t salt
1 t pumpkin pie spice
¼ t cayenne
¼ c molasses
¼ c of butter
1 cup of heavy cream
Gorgonzola cheese

Put everything but cream and cheese in crock pot and let simmer on low all day.
Right before serving, stir in cream.
Garnish individual bowls of soup with gorgonzola cheese.
Serve with bread

thanks, I know I've been gone awhile from you guys.
My bird breeding projects are taking a HUGE chunk of my time and I have TWO high school seniors; applying to colleges, needing pics, preparing for dances, parties and games, piano lessons, voice lessons, guitar lessons, riding lessons . . . I have invented A LOT of new crock pot recipes lol!
 
Katy, I think I love you....

I grew cooking pumkins this year (Rouge Vin d'Etampes) and they provide a LOT of flesh for the size.

I'm not a big pumpkin pie fan so have been looking for different things to do.

This soup not only sounds yumalicious & has some of my favorite things (bacon! black beans!!gorgonzola!!!) but it cooks in a CROCKPOT!!!!!!!!

I don't use a lot of cream but would subbing 1/2&12 or whole milk work?
