I'm good! Oh, that's alright, I don't mind! My first name is Elly and my middle name is Claire. You can call me Elly or Claire, I really don't mind. I suppose my username makes it a bit confusing, doesn't it!?

Kosher means it doesn't have any pork, shellfish, bugs, or anything else unclean in it.
Some remarks if I may:
1. The animals that a Jewish believer can eat are:
From the mammels: only ruminants that have cleft hoofs : Catel, sheep, goats, deers and gazelles .
From birds: only some specific bird, it is complicated for to explain it in English, so I will not.
From fish: only fish that have fins and scales (so no eels for me !)
No amphibians, reptiles and insects except from 2 Exceptions: we can eat the honey from the honey bees but not the bees itself, and the is a species of locusts that we can eat.
2. We have a phrase that says:האמונה מתחילה איפה שההגיון נגמר.=
"Faith starts where the logic ends" if you have a religion faith you don't need any logic explanations! Because if it has a logic explanations it isn't faith anymore it is Scientific knowledge. So you believe or not, it is very dichotomic.
Abaout the animal that we can't eat the word in Hebrew describing them is: לא טהורות, טמאות it means "non pure" it doesn't mean "non clean" everyone that have ducs can testify that they can be EXTREMELY not clean.... while pigs can be EXTREMELY clean :lol:
So the issue of not eating certain food is on the spiritual level, it is about the influence of this food on your soul and not on the hygienic level.
3. The dietary lows in Judaism are extremely complicated.....

You eat all kosher, Benny? That's very good to hear! I also eat all kosher (well except the fact that you might not agree with me about using calf rennet to curdle the milk).
It is my understanding that Jews think the part in the bible where it says you shall not boil a young goat in it's mother's milk, means you can't have dairy and meat at the same time, and you can't use the calf, lamb, or kid rennet to curdle the milk. Is that right? I don't know all that's to it, but I think that's how it goes.

When you read the bible in English it says unclean, but I suppose a more direct translation of it would be from Hebrew - not pure.
