I agree zillions. I keep every chick I hatch (except those I donate for free, lol) because that one may be the champion I'm looking for. Next year I have a goal to hatch 200 chirren.How many breeding birds do you have?
You have to be able to meet at least 1/3 or 1/2 of the people that want to buy from you.
If you sell all the chicks you hatch from your breeding stock then you won’t have any birds left to expand your breeding stock. I think you need to build your breeding flocks up. Make a wait list for day old chicks and started pullets/cockerels. After a few years you’ll be able to sell your original breeding stock because you will have improved their offspring.
Some people are willing to pay the extra cash for the breed/variety/ quality of bird even if it’s for a layer flock.

For me it's a family affair. Next year I'm getting a hoop coop for the growouts I hope. That will be better than multiple cages in the coop.
