Spicy Sweet Potato Bites
I abuse the original recipe pretty much so we'll just go with how I like them...
2 large Sweet Potatoes, peeled and cut into 1" cubes (best you can)
2 TBS melted butter
1 tsp Chipolte chili powder (you can adjust based on your desire for heat)
1 tsp Cinnamon
1 pound bacon thick cut.
1/4 Cup Brown Sugar
Maple Syrup
Put potato chunks in a large bowl, add butter and spices and toss ensuring all are well coated. Let set for an hour or two occasionally tossing while waiting. Wrap each piece of spiced potato with bacon and secure with a toothpick. Place on a cookie sheet lines with parchment or a mat. It's a good idea to spray either.
Preheat oven to 350
Place bacon wrapped potatoes on the cookie sheet, sprinkle with the 1/4 Cup brown sugar. Bake 40 minutes until the bacon is crisp and the potatoes soft. Place the potatoes on serving platter and drizzle with warm maple syrup.
It rained yesterday. The guineas aren't happy that it’s wet outside. They’ve been suuuper loud today. They’re also being quite destructive. I’m giving them one more time to knock over the thing I keep in front of the call ducks’ door Guineas are so annoying.
