Well THAT was dumb! I just tested all four of my digital thermometers with the ice bath test, and they were fine. Some variation, but within 1-degree.
Then I tried them in a steam bath, sealed inside a freezer Ziplock baggie. I tested a baggie alone in the steam bath to be sure it wouldn't degrade or melt. All was well. Bagged up the thermometers, sealed them up, and dropped into the steamer. Ten minutes later I checked on the progress.............Oops.

Well THAT'S about $60 bucks I'll never see again!
 
A thermometer's accuracy at freezing can be wayyyyy off at 100°F. I would look to other means because this could compound the issue.
What about testing at freezing and at boiling? Though you need to know your elevation if you do a test with boiling water. I'm at about 800 ft, and that's enough to matter. It's about 1/500 degree F less for each foot elevation; ie, water boils at around 210.5 F at my house.

I wouldn't put them through a double torture. My Govee reads .2 increments and is what I trust. When I set out thermostat in the house, it's right on point. That's close enough for me.

I tried a meat thermometer sticking it in boiling water, and it showed WAAAAAY over 100 degrees. That’s why I’ve only tested at freezing point.
