Keeper zucchini recipes

Here another family favorite Zuchinni Casserole
3 cups peeled grated zuchinni
1 cup bisquick
1/2 cup chopped onion
1/2 tsp oregano
1/2 cup oil
4 eggs beaten
1/2 tsp salt
dash pepper
dash garlic
Mix all ingredients together in large bowl. Pour into greased casserole dish and bake 30-40 minutes at 350.
 
I am not a squash person.........but fried zucchini is one of my favorite foods! lol I had a recipe I used last time I made it that was great......but I don't know where it is now........lol

zucchini and yellow squash and ours are just know coming in...
heres how I cooked some for last nights dinner,

I cut them in half, then sliced them up (got about 5-6 slices each half, not to thin), sprinkle salt, pepper and garlic powder on them. Heat olive oil in skillet and salute them, sprinkle with oregano. When cooked the way you like it add Parmesan cheese to top... so good.

I also love to roast them in the oven with other veggies such as... carrots, onoins, peppers (cut everything up match book style) put on a baking sheet, drizzle olive oil on top with seasonings, mix around. (I make enough to fit on 2 baking sheets). Roast at 400 until the veggies are done. This is great added to a cooked bowl of pasta with mozzarella and Parmesan cheese! You can even throw in some cherry tomatoes.

I also shred them up and add to everything

Shred them up, put in freezer bags to use in zucchini/squash bread later in the year.

I made a zucchini-hater eat this and they became a zucchini-aholic:

Slice zucchini into coin-shaped slices, about 1/4" thick
(I like to use small zukes so the slices are about half-dollar size)

Saute in as large skillet in olive oil with some mashed cloves of garlic until browned on both sides. The pan should be large enough for all of the zucchini to fit in a single layer.
You kind of have to babysit them as they fry, turning the slices over & over until well-browned on both sides.

Once all slices are browned, take the pan off the heat & set it aside while you cook some angelhair pasta.
When the pasta is done, drain it well then add to the pan with the zucchini. Stir well, then stir in some grated Parmesan or Asiago cheese - no cheating with cheese from a can, it has to be fresh!

Serve with more grated cheese & watch zucchini-haters change their minds.

he ate it said it was good and i loved it... used the fresh sausage the neighbor gave me and it was really good.

it is a keeper!

ETA i did not have bread crumbs so i used cracker crumbs instead. worked fine.
