The taste?
That's why I only swap out half, at most. Sometimes I do a bit more sugar than substitute, but the flavor is pretty mild at half -- especially if there's another strong flavoring, like chocolate or peanut butter.
But... all substitute? Blech, I did that by accident once -- those poor brownies were ruined.

I agree. On some things I will do up to a 3/4 swap out, but having a little of the real stuff cuts the aftertaste by a lot.

Since we are off subject @sourland Thanks for all the broody help. Half my flock is broody. 2 hens are brooding in the same box, even though there is empty boxes elsewhere.
