Killing Geese (Meat) - Help!

They didn't bleed out properly, thus the blood pooled in the upper breast. They're still safe to eat of course. I've always hung and bleed out my birds when butchering. And I always recommend it to others.
 
I also say they're fine to eat - looking really good and plump!

I prefer to use an axe. Goose necks are extremely strong, but with a sharp axe you don't need to use that much force - and they're really easy to bleed out. We're always two people: one holding the gooses body and ready to steer the neck when the head is off and the bleeding starts (it's like a garden hose); the other holding the ax and the gooses head. I like to hold the head with a bent metal rod so I don't risk hitting my hand with the axe.

Thanks everyone! Feeling much better now thanks to all your comments! Going to eat them tomorrow and I'll let you know how we get on! Do you have any advice where I can read up on butchering poultry? There's lots on chickens but I couldnt find much on geese or other fowl, and interested in breaking their necks over using an axe, or at least learning other ways

Go to the "Geese" forum and post a thread there :)
 
Not sure if this is helpful for you or not, but I use the same procedures for ducks, turkeys and chickens. Once I have geese plan on same approach.
