here in this meat bird forum, just before Christmas I posted detailed info on butchering 22 week old BJG and Red Dorking males. Lots of pics and weights. The BJG was larger than the Dorking, as expected. The Dorking was meaty and seemed to have a richer darker meat. Both were butchered and rested for about 3 days. Then seasoned and grilled over an open fire, and yet we’re still very tender and edible. The Dorking was crowing and getting hormonal at 22weeks (the BJG was not). The internal testicles on the Dorking were significantly larger than the BJG, as expected since the BJG are slower to mature. we thought that the Dorking might be tougher bc of the maturity status, but this was not true -both were very good eating.

I remember reading on here someone raising dorkings and dorking crosses. He said he had issues with fertility I think. And some of the birds dying. It seems that the limited gene pool has taken it's toll on the breed. I don't know if this is the case with all dorkings or just the line he has.
