Had one turn out really good at lunch today thought I would pass it on.
Salmon Pattie Sandwich
(make four)
3 cans of wild sockeye salmon (costco has them in stock now) drain
1 cup italian bread crumbs
2 eggs
1 cup fresh basil leaves - slivered
1 fresh Jalepeno - diced
1 Tablespoon garlic powder
Mix together thoroughly with hands. Form into 1 large ball. Cut ball in half to make 2 equal size med balls. Cut 2 med balls in half to make 4 equal size small balls. Form small balls into patties.
Pour enough olive oil to coat bottom of large heavy fry pan. Heat until hot over medium heat. Add patties and cover pan. Flip over when very brown on bottom and brown other side (keep lid on).
While patties are cooking mix up a mayo spread.
For this I used:
1 cup mayo
juice from 1 lime
red pepper
put on wheat buns with tomatoe and lettuce.
Not my fanciest recipe but was a big hit with everyone.
No need to add salt so low sodium and depending with what you do for a spread could be low fat as well.
