Left Over Chicken and...

Doggone folks that is some good ideas !! Now I gots to make some fresh tortillas. I love whole leg quarters - especially because the thigh portion to me is the perfect piece off the chicken. Love that rich flavorful meat.

This recipe says it makes 12 but I like to make 10 larger tortillas, I think they wrap better.​
 
This thread got me looking in my freezer/cupboard/fridge. I got a bag of pinto beans, cans of diced tomatoes, taco seasoning, 3 frozen chicken thighs, a couple cans of chicken stock and yukon golds, celery, carrots and onions. I keep seeing this scene from THe Good, The Bad and The Ugly where "Angel Eyes" is eating this stew in a Mexican man's house while searching for "Blondie"...
So it's gonna be that and I'll report back when I can. Right now I have Ivy the kitty insisting he be right on the keyboard with me so getting this whole little bit typed has been hilarious and affectionate at the same time.
The tortillas will be part of a grand rainy day meal.

I know the exact scene you are talking about....that's one of my favorite movies. Man that sounds good, I'm in the middle of making a banana pudding, my pudding is cooling right now. I have some bananas that need to be used and some extra eggs, I love making a rich vanilla pudding with lots of egg yolks and tons of meringue to make my banana pudding.

It's cold and rainy here today.... a pinto bean stew and some homemade tortillas would really hit the spot with banana pudding for dessert. Thanks for the inspiration...now I know whats for supper.

Your kitten is a doll, so cute!!!! My youngest daughter has a half grown kitten that she hand raised on a bottle. Her husband was cleaning out an old shed to tear down for the wood and he found a momma cat and some new kittens in it, the momma and all but one of the kittens had been killed by some wild animal. He thinks he must have scared the animal off when he pulled up in his truck because he said the bodies were still warm. He brought the last surviving kitten home to my daughter, it's little eyes hadn't even opened yet. We really didn't think she could keep it alive but she's an excellent nurse and did a really fine job taking care of it. She named him Rikki, as in Rikki-Tikki-Tavi. He is such a great cat, she taught him to come, fetch, sit and stand on two legs on command. Yes, she has dogs and Rikki wants to be "one of the guys"....he love to ride in the car and he will even let her walk him on a leash. Poor little thing doesn't really know how to be a cat but OMG he loves his Mama!!! And the great thing is Mama loves him right back.​

You know what! I forgot about my pickled pepper rings!!! ARGH! Those would have been so awesome to add. They were open in the back of the fridge and everything. I had salsa open too, so I topped the pie thingy with salsa on my plate yum.

All I did was pick the chicken, throw it in cast iron pan on the stove over medium low heat. Added chopped onions, 1 can of the creamed corn, 1/2 cup of turkey stock left from Thanksgiving, the packet of taco seasoning. When it started to bubble I poured the batch of cornbread mix I made from the cornmeal on top and slide it into the oven at 400 degrees for 20 minutes. Came out perfect!

So well in fact, next time I'm going to do it on purpose and not because we're down to left overs.

Tonight I have buns I made and I'm going to make turkey burgers with caramelized onions & fennel. I had carrots in the garden ready, but not a lot. So I'm going to do a quick pickle to the shredded carrots and make a type of slaw to put on the burgers or as a side.

Tomorrow looks like I'm going to try my hand at making homemade pasta and using those canned tomatoes to make a homemade sauce for them.

One way or another... I am going to make this little bit of food last until Friday when I get the money to get to the grocery store.

We will survive!!!
