Leftover quail recipes?

Anyone have a go-to way to use leftover cold quail? I was going to go for the standard salad mix with apples and whatnot but I thought I’d check here first!
 
How old am I? Old enough to hesitate responding to my own thread, but young enough to do it anyway.

Leftover cold quail meat, chopped up all rustic like. Then a tiny apple - with the peel on because I’m still Punk, a stalk of celery (ribs peeled off because I ain’t still Metal), chopped mixed nuts, a scallion, some mayo because mayo is good on anything, pepper, stir, serve over already chopped romaine because who has time to chop romaine at lunch... and it’s...really good!
 
Looks good! I'm more or a pickled Quail Egg sorta guy. But the Quail Meat Salad looks healthy and delicious!

For some reason, good ole chicken salad is our go to thing.

Oh we definitely have pickled quail eggs in the fridge! I’m gonna try and make a spicy batch next.
