Let's Pickle Some Quail Eggs....

My hens laid all winter long, got lots of eggs so it is pickle time. Anybody got anything new. Probably use Fat Daddies recipe. The last I did using Cindy's Pickle egg recipe last time not hot enough for us Texans LOL
 
Where do you get your jars? Do you actually submerge your jars in 160 degree water to form a vacuum seal? I heard that the normal canning process disintegrates the eggs. Help?
 
You can get jars any where from the grocery store, Walmart, even TSC.... Remember the eggs don't hold "heat" well if you like them real hot! The brine on the out side of it is the hot part. After you have your jars full and lids tight. You can water bath the entire jars at 160 for 10 mins without harming the eggs at all. I heat the brine up to temp, then pour it over the jars loaded as I wish... Then tighten lids and back in the water bath for 10 mins or so.... They will not come apart. In fact the longer you hold them at a high temp, the tougher they will get.... I don't care for a rubbery pickled eggs. They taste the same but texture just ain't something I want to eat! By the way.... If you doubt your seal or brine strength, just keep them in the frig... They'll be good way longer than they last! Good luck....
