With lots of chickens comes lots of eggs, and with lots of eggs comes lots of excess eggs. To prevent spoilage in my kitchen (i learned after the first rotten egg on the counter
) we like to boil some eggs, peel them and plop them down in some dill pickle juice. Let them sit for a few Days before eating, and they were darn good. I could eat like three in one sitting.
now, however, I can take a bite out of one, chew for a second.... and gag.
the texture is gross now. chewing the whites leaves me dissatisfied, grossed out, etc. etc. they’re too rubbery and tasteless. The yolks are fine, but I just can’t get past the whites now.
am I doing something wrong that I was doing right before? One pickled egg has been sitting in the jar for about a month now, because I can’t bring Myself to eat it and because my hens have decided to stop laying ATM. I just want some yummy pickled eggs....
