I was crazy busy with chores and cooking and just had a chance to warm up, sit down and look over some of your stuff. Boy I can see some of your strata dishes will definitely be part of our Saturday morning meals. I especially like the one where you make the thing up overnight and let it rest in the fridge to bake off the next day - cool idea using bread (I can see whole wheat bread in this) for the crust. COOL

The Ham Strata recipe you selected was actually featured by Helen Moore, Food Writer, in the Charlotte Observer (NC)! DH & I owned a Bed & Breakfast in Raeford, NC (near Fayetteville, Fort Bragg). In 2005, Helen and her husband, Jack, stayed with us for 5 days when she was in town as a food contest judge for the annual Turkey Festival. I made the strata for breakfast one of those mornings. She enjoyed it so much that she wrote an article about breakfast and brunch fare that featured our B&B and that recipe. Later, we bought our farm property in 2007. The B&B property is now a rental.

Your frittata in that linked post looks grand. I'll give it a try.

BTW, I've found that quail eggs make the fluffiest, most delectable stratas, frittatas and omlettes. If you have access to quail eggs, give it a try. I sub 5 quail eggs for each large chicken egg (based on a 2 oz weight for the chicken egg).

I built Kim's Ham Strata last night before bed, it took five minutes to assemble, and as per directions let it rest in the fridge overnight. I got up about 4am because it was blowing like crazy here and took the strata out of the fridge to warm some and turned on the oven. At 05:30 I baked it off, it's really good. I did not look hard for the 13x9 pan and used this small round Corning Ware casserole. Comments: my dish is too tall and it would bake off better if I'd followed directions. It tastes amazing, I found the 13x9 pans and will make this for my in-laws. This is a keeper !!

Barefootmom-my DH loves angel food cake and we're both looking forward to making some.

I enjoyed looking thru everyone's recipes too.
Since my DH and I are getting 20 eggs per day from our birds, we are getting creative.
I have made homemade caesar dressing
Fresh pasta
I make frittatas and the such....love artichoke or mushroom, asparagus, heck, just about anything for a quiche .
I made homemade chicken and dumplings
I make a topping that is basically a custard type for the top of casseroles. It is a couple of eggs, milk and a little parmesan or shredded cheese of choice. It makes a mean eggplant lasagne topping.

PSA:
Run! Do not walk to newlyweds' blog and grab her recipe for chopped salad with fried chickpeas!

I always have a can of garbanzos in the cupboard & this was such a great new (for me) way to use them.
I may try baking the garbanzos next time but sauteeing in a small amount of oil really didn't add many calories & the result was amazing.
 
I'm such a sucker for plain old baked egg custard and various kinds of bread puddings that this usually uses mine up. After I scramble some for the chickens, of course.
