I cherche for lively chicken and active chicken being able to fend for himself
Jersey Giants get pretty big and are cold hardy. I had an Australorp rooster who fought off an owl once. He only win because my dog came to his rescue but he held him off for a while and none of his hens got taken.
 
I know you are looking for hardy chickens that are able to fend for themselves.

A few questions:
How cold do they need to be able to survive?
What are you looking for in chickens? Eggs? Meat? Dual purpose? Entertainment?

-40... (Celsius or Fahrenheit?) Either way, that is pretty cold.

Will they have housing? I don't know too much about meat chickens as I have never owned them (my birds are pets and for eggs) but I'm sure someone else here does. I do remember reading that Australorps are fairly cold hardy and can be used for meat.

Fahrenheit, I believe. It's canada, so it gets colder than the -20-30F my state gets occasionally.

In the winter I can't keep Cornish bantams alive without special considerations, and they're probably a more cold tolerant gamey looking bird because of their mass
 
-40 Celsius and Fahrenheit are the same.
I have Easter Egger and we get weeks that are -20° Fahrenheit. They do well at this temp but I also put up greenhouse panels that cover their run to help them stay warm with what sun we do get.
