"Louisiana "La-yers" Peeps"

Some older canning books do have different recommendations than the current ones. This site has tons of great instructions on canning many types of food items. I believe they do follow USDA guidelines. There is a search function to help you find what you are looking for. My Ball Blue Book also has instructions for pressure canning white potatoes. They do have to be pressure canned because they are a low acid food.

Canning white potatoes. http://www.pickyourown.org/canning_potatoes.htm

The star of my day was dehydrating the thin slices of potato! It works great!

And 15 quarts of plain potatoes canned. And we still have more. I think tomorrow it will only be the dehydrator going though. I have lots of other things to do.

I would love to get into cheese and butter making but first I need to find someone that can sell me unpasteurized milk.
I really want a cow, or a goat.........but I have to pick up enough poo in our small yard from the dogs as it is

I cannot wait until "someday" comes and we can have pasture!

This is a site that I like:
http://www.simplycanning.com/

Even though she didn't know if/how to can cabbage she put a page up and let the comments begin. I read threw all the comments and came up with my formula to can it based on the results of others. I love the fact that there are so many others that comment with what they added, how they processed, and what didn't work.
Hey have you ever tried those Tattler reusable lids? I ordered a set of them when I ordered some seeds(that I said I wasn't going to order, but it was my hubbies fault for sure!!! LOL) I am looking forward to trying them and see if I like them. I am cheap, so the idea of having that be reusable is fantastic.

I haven't tried them but I have looked into them. They were a short lived fad in the late 50's. For the people that have bought them, they either love them or hate them. I have not seen any reviews in the middle. It's been a while since I looked them up but there is something about the tightness of the lid during processing that made it a make it or break it thing. They said to follow directions for the lid exactly to get it to work right and it is a learning process if you are used to regular lids. I buy kerr lids with the picnic pattern for $1 a pack each year. (on sale at walmart in may-june) I don't like great value lids because I don't trust the seal and I am to cheap for ball lids. Let me know how you like the tattler's.

Its easy to find goat milk I'm sure you could get it raw. My chiropractor is giving it to his newborn b/c mom couldn't make enough milk. The lady at our health food store help him find a farm.

I won't buy those great value lids either!!! Cheap, cheap, cheap!!! I read countless accounts of people having them fail this last season.......and rust too. I usually buy Kerr or Ball, whatever is cheaper. I also have looked into getting them in bulk from places like this. https://www.lehmans.com/c-62-jars-lids-and-rubbers.aspx But then I would have to come up with that $$ up front as well. I have read some people say that they are just slightly thicker from places that sell them in bulk like that. Which is better for pressure canning. Have you ever tried the Golden Harvest brand lids? I sometimes grab those if the others aren't available. I haven't had any problems with those seals. They have them at Freds' Discount store.

I have also heard the same about the Tattler lids. Either love them or hate them. I am thinking that people that hate them are just not using them according to the directions, because it seems (its been awhile since I read the directions) that you use them in the opposite way as the metal ones..........at least I hope its operator errors, lol. Because I really want them to work!!! I actually saw a lot of people using them this last summer. That is how I even found out about them. The ones I ordered are supposed to get here tomorrow. I will let you know how they do.

I WISH I could find it raw! The only place I know of to get it fresh is from WesMar Farms. Its pasteurized though. It is illegal for them to sell it if it isn't pasteurized. But its really good!

You need to find a small farm. then deveolp a relationship leading to trust then you could get some. Like someone with a small heard that sells to the farmers Market.
