"Louisiana "La-yers" Peeps"

I've raised Cornish X in the past and we butcher chickens occasionally from our flock. We ordered the CX from McMurray and we didn't lose any, they were very healthy. They are gross and take a lot of tending to keep clean, but they fill the freezer fast. 8 weeks. But we can keep regular breeds of chickens without all the fuss and they lay eggs until you are ready to butcher them. They both have good things about them.

We have not raised pork. But I do love bacon <3 I have Canadian bacon and regular bacon that I have drying in the fridge getting ready for smoking tomorrow. It has been in brine/curing for a week. We are using pork from a wild pig that was gifted to us. We did all the butchering ourself. Ew.

I just had wild boar gifted to us. Its ground and mixed with 20% pork fat and seasoned its yumo!!! Pam

Cody I wouldn't worry about the air cells I let mine lay to the side the air cells were slightly eleavated and they hatched. The hen hatches eggs laying side ways as long as their not upside down your good. Pam
 
Angelisi does and sells them if you look up Southern Pastures in baton rouge she has a web site and would love to talk about it. She also does rabbits. Pam


I saw someone had put up an ad that was for CX that were almost ready to butcher and they only wanted $6 apiece for them! Too bad they were far away from us. They said they just wanted to drastically reduce their numbers fast. Good deal for anyone that could take advantage of that.

It would be nice to have some sausage with this pork. But we don't have a grinder. I might hand chop some or in the food processor just to try out some different seasoning combinations.

Ok. Thank you Pam. I decided to leave them as they were last night. It had been over 12 hours since they stopped turning.

I'll take your advice and not add the second water pan. Will leave it where it is around 50%. Since the humidity averaged 30 for the first 18 I think it's safe they won't drown. I'm more worried about them sticking. The wheels are set in motion now so I'll ride it out. :)

Use your food processor it will be a finner chop and less work. Do you have a kitchen aid mixer? They have a grinder attachment you can get you could probably find it used on eBay .Pam

You should have good numbers I thought you were saying it had been high the whole time. Don't panic if they don't pip a day early like you calculated they might still take the full 21 days or more. Pam
