Good morning everybody, guess what?

WE GOT RAIN YESTERDAY EVENING! ALMOST 1/2 INCH OF BEAUTIFUL, WET, COOL RAIN!!

it's actually still damp this morning! I'm heading out for my walk now. I let the main flock out & they are so happy scratching around in the wet grass instead of panting from the heat. I wish this would last!

Morning guys. Went out before dawn for a lil fishin. I really suck at fishing,lol.... I caught a 2" sailcat and 3 croakers.Hubby caught some nice white and specs.Went floundering last night,but didn't even see a single flounder.Stuck one stingray and saw tons of crabs.... If we go out tonight I'm bringing my net with me. Have some boiled crabs tomorrow...lol... I haven't been floundering in YEARS(like more than a decade...lol) ...so I was huffin a lil bit in the end..hehe...gotta get back into shape.I feel like a moose.

Just got in from feeding the girls (and guys).Was a lil late feeding them this morning and thought I was gonna be attacked!!! Remember awhile back when we were talking about the whole being eaten alive thingy? Well,I thought I was gonna be.Seriously!! I'm positive it was orchestrated!!! One ran in from one side and caught me attention,while the rest come in for the trip. Luckily I was close enough to the trailer to catch myself.... Could you imagine?!!! They were all sitting there like rabid dogs waiting for me to fall!!!
I've got to go out and pick up some more water pans today.I have a few of the 3 and 5 gallon waterers and a couple other pans,but they are draining them the last couple days... I picked up my PVC yesterday and plan on gettin the autowaterers put in the runs today.That will give them extra water spots,but I still want a few more pans out.

Thought my garbagemen were gonna quit yesterday...lol...Being out in the county we only get trash pickup once a week instead of twice like the 3 cities we have,sooo I made up for it yesterday...lol... With all the picking up and everything this weekend past,I piled it in for em.They even were nice enough though to throw the swimming pool away for me.That was 24' diameter of heavy plastic...lol... I shoulda took bets,cause everyone else said they wouldn't touch it...lol... So I brought them out a couple cold can drinks for em.

I was just falling out reading this! Hey -- what's a sailcat? and a croaker too, for that matter. I'm not up on my fish breeds. (well I do know what a flounder is, lol - those suckers w/the eyes on the sides of their faces).

BTW I've won 1st place Rapides Parish Fair AND 1st place La State Fair w/my muscadine jelly, back when we all used to compete every year. Still use the same recipes though - as noted, I don't strain them several times any more since I'm not competing them:


Muscadine Jelly

1 quart grapes (about 1 1/2 pounds) to 2/3 cup water = about 2 cups juice
3 quarts grapes (about 4 1/2 lbs) to 2 cups water = 5 1/2 cups juice
1 gallon grapes (5 1/2 -6 lbs) to 2 2/3 cups water = 7 1/3 cups juice

*Note: 2 gallon ziplocs of grapes yielded 10 cups juice (I freeze extra grapes each year in case they don't make the following year - they will keep, frozen, for one year). *Note: if you are a little bit short on measurements, you can add a little Welch's grape juice to the muscadine juice to make up the difference.

Sort & wash grapes
Place a single layer in bottom of stockpot. Crush grapes. Continue to layer & crush all grapes.

Add water according to guidelines above & bring to a boil.

Reduce heat cover & simmer about 15 minutes until hulls are tender. Cool.

Use a colander to drain juice into another container, press pulp to release more juice.

Take the juice stock & strain through a cheesecloth to make a nice, clear juice for jelly.
(*note* I do not do this unless I am going to compete the jelly in the fair)

Store & freeze pulp & hulls for jam.

Allow juice stock to stand undisturbed overnight. You can freeze this up to one year before making jelly out of it.

Strain one more time leaving sediment in bottom. (again, I skip this step if not competing. It may look cloudy right up until you start the "hard boil" part of the process; but then it will clear up. It's just that when they judge it in the fair, they don't want to see any white "foam" bits in it. I do add a pat of butter when I start cooking it, & also I do skim most of the foam off (we eat that part right away)!

Jelly:
5 cups juice
1 box surejell
1 tablespoon lemonjuice
7 cups sugar
yields 8 jars (1/2 pints)
Follow directions on surejell for grape jelly.

Jam:
6 cups chopped hulls & pulp**
2 tablespoons lemon juice
1 box surejell
7 1/2 cups sugar
** Put hulls in pan, cover w/water & cook 15 minutes, add 1/2 cup hull juice to pulp for color.
Strain pulp through a colander to get seeds out.

A sailcat (or sailfin cat or gafftop depending on what redneck ya ask...lol) is a type of catfish that has a long feathery tip to their fins instead of the short points.Still sticks the he77 outta ya,but much better eatin than the old hard heads and get much bigger.

Croaker is kinda pretty for an eatin/bait fish.I only use them for cutbait. They actually "croak" like a frog when you catch them.
