Sounds good. I would think that as long as you don't open it after you have canned it, that it would last for forever. But when you open it, you have to eat it and then refrigerate. I am doing all the research that i can to learn more. I want to stock up for the future.



Not completely true. If something goes wrong in the canning process (like not good seal)  you can usually tell in the first week. The most dangerous thing in canning is botulism. It presents itself with a raised lid and bad smell after you open it. Just look over your lids every now and then. It happens most often with starches from beans and skins of potatoes added to a recipe. If you have nook or nook for pc I can give you the name of a great depression era canning book updated for new canning measures that is a free download.


Yes, I did read that. They said if that happens, DO NOT eat or taste it because it could be deadly. Yes, please share the download on canning please. Thank you.

But even if you add vinegar, that's ok because that's still "natural". Other than that, no other preservatives are added right? And unless the tomatoes come from your garden, you really wouldn't know if they are GMO or not. I never see any tags on anything in the grocery store.

Correct. Most tomatoes in the grocery store are GMO because of the cost to raise them. They have pesticides in their DNA instead of sprayed on leading to less loss from bugs. Some seeds you buy are GMO and you have to look for the ones that aren't. I have plenty of open pollinated non GMO seeds if you need any to start then you just harvest the seeds for the next years stock. I have a list somewhere of PLU codes and what they mean, when I find it I'll post it. Also Organic does not mean non GMO by government standards, it just means nothing added.
 
DI just planted cucumbers again. Every time I think I've caned enough bread & butter pickles to put some away my family eats them all.If I buy them from the store they last forever. If you like B & B pickles you have time to harvest cucumbers if you plant now. It's a very easy beginner recipe. You don't need the pressure cooker. p

What are B & B pickles? The thing is with me I hate sour pickles. :sick I only like sweet pickles and sweet relish. I guess I would have to can and add sugar to get it sweet?
 
Some of the stores in our area are stating non gmo. As for tomatoes if it matters to you look for heirlooms . P
 
I think I would stroke out right now if I had to plant a garden. Unless I thin out my flock and other livestock, I can't plant a garden any time soon. I did plant a small garden last year and that almost killed me. I just support my local farmers and I buy their veggies to help them. These days after getting off from work, running errands, getting home and doing chores, feeding/watering, picking eggs/checking on animals, getting egg orders together, making wine on my wines days, I have been getting to bed sometimes between 11:00 PM or 1:30 AM and getting up between 4:00 AM - 5:00 PM. I'm dog tired. :th Sleeping late for me is getting up at 7:00AM on the weekends. One Saturday I slept until 8:00 AM and I thought I had hit the jackpot. :celebrate
