"Louisiana "La-yers" Peeps"

Funny you should ask about canning today. I pickled green beans, okra, and cucumbers today and just finished peeling and cutting 30 pounds of carrots to pickle tomorrow. I have more carrots that I'm thinking of pressure canning, but I may have to buy more jars. lol

Quick question for everyone: I have TONS of carrot peels now, I'm going to send most of them across the road to a friend for her compost, but I was thinking my chicks might want some. They are 11 weeks old. Do y'all think they'd like them? And would I have to give them grit too? I have a little chick grit around here somewhere.

I have made 24 pint jars of pickles (spicy, bread and butter, dill), 2 quarts spic garlic dills, and now, 9 half pints of sweet relish. I made 12 half pints of mayhaw jelly for the first time this year and 6 half pints of jalapeño jelly.
I need jars too! I am addicted, Lol. It's like chickens!

I've been looking for a good bread and butter pickle recipe. I haven't found one yet that rivals my grandmother's. lol

Cajun Magnolia, (I can not do quotes on the iPad, sorry) I have made 2 different batches. The better one was 3 c. Apple cider vinegar, 2 cups white vinegar, 5 cups sugar, 2 Tbsp mustard seed, 2 tsp. Celery seed, 2 tbsp picking spice and. 1/2 tsp red pepper and 1/2 tsp turmeric. I used sliced pickling cukes and vidialia onions. they smelled exactly like the pickles they serve at Cracker Barrel.
I am also using the Pickle Crisp granules. The lime soaking was a pain.
There were so many recipes out there, I just combined a few.

bread and butter pickles -- can't wait to put some up!

I use the Mrs Wage's Old South Lime recipe -- agree that the soaking in lime is a pain but it sure makes a nice crisp pickle! I do it for my dills too.
Here's the link to the recipe:

I give carrot peels to my chickens & they love them.

Have to put up green beans this afternoon after work. I blanch & vac-pack them for the freezer.

21 absolutely gorgeous Welsummer eggs rocking away in my 'bator! Hope I get a good hatch!
