Love Me, Love My Garlic

I put in 600 cloves last fall and am looking forward to diggin them up in the next few weeks!

Mmmmmm... I hope to eat so much with fresh tomatoes and basil so that it oozes from my pores!
 
I plant different types of garlic and shallots each fall. This year the best performers are Garlic 'Georgian Crystal', and Shallots 'Sante'.

A disappointing one is Garlic 'Chinese Pink'. The plants are not robust looking, and when I dug one up to see if something was wrong in the bulb, the bulb was puny. Not worth the space I devoted to them.
 
There is a great book called the Garlic Testament....I was truly surprised that for space its one of the highest dollar crops...not a fan of it myself I find egyptian garlic or the walking onion....one of my my favorite plants...so pretty no care...anyone want a bulb to plant id be happy to send
 
Mmmm--can't wait! I planted about 200 Georgian Crystal, 200 Musick and about 200 Chesnok reds. Got the bulbs from a local grower, picked out the best, biggest cloves and ate the rest all winter. It will be fun to see how well these have done!

I have a small CSA business and have been including lots of garlic scapes in everyone's baskets. Someone mentioned scape pesto--do you have the recipe?!? Sounds wonderful! I still have about 100-200 coming out of the garlic yet. I've been chopping mine raw on salads and chopping it into chicken and vegetable soup-yum

Is there an online seller that you can recommend? I would love to have fresh garlic from the garden
 
Can you find somebody local? If you have a farmer's market, that would be a great place to start. At least here in WI, garlic is about to be harvested in the next month. That way, you would know you are planting varieties that do well in your area.

Otherwise, online I love Seed Saver's Exchange and Seeds of Change. However, that is going to be a very expensive way to start... Good luck!

Here is the scape pesto, and a few others recipe i found!



Garlic Scape Pesto (from maryjanesfarm.com/SimplyMJ)

1 cup grated Parmesan cheese
3 Tbsp. fresh lime or lemon juice
1/4 lb. scapes
1/2 cup olive oil
Salt to taste

Puree scapes and olive oil in a food processor until smooth. Stir in Parmesan and lime or lemon juice and season to taste. Serve on bread, crackers or pasta.


Fried Scapes (from dakotagarlic.com)
Cut scapes to green bean size and saute them in butter and salt for six to eight minutes. During the last minute of cooking add about 1 tsp. of balsamic vinegar.



Spinach and Scape Frittata (adapted from dakotagarlic.com)

3 Tbsp. olive oil
10 eggs
1 cup (1/2 lb.) chopped raw spinach
1/2 c. grated Parmesan cheese
1 Tbsp. chopped parsley or basil
1/2 c. finely chopped garlic scapes
salt and pepper to taste

Preheat oven to 350°. In a large bowl mix all ingredients except oil and scapes. Heat oil in a 10-inch ovenproof skillet on the stove. Add the scapes and saute until tender on medium heat for about five minutes. Pour egg mixture in skillet with garlic and cook over low for three minutes. Place in oven and bake uncovered for 10 minutes or until top is set. Cut into wedges and serve.


I ordered my garlic from Filaree Farm, they were the sweetest people, they will help you pick what kind will grow best in your area!
