Low carb (very very low carb)

Good idea on the pork rinds. I use almond meal a lot but it changes the texture of stuff while pork rinds don't seem to do that much.

Have you checked out Stevia?

I use the dried leaf Stevia in cooking and for teas. Refined Stevia tastes HORRIBLE!​
 
I had a bit of a sweet tooth last night and ended up with a diet coke poured over a couple of scoops of frozen cool whip.

I made a typo the first time I typed this and it said "poured over frozen COOP whip" hmmmmmmmm I wonder what y'all would of thought i poured my diet coke over. . . . . . .
 
Ack! I gained 5 lbs back in the last two weeks - depressing. Not sure what went wrong, I was doing so well...
 
I started my low carb diet this weekend. In fact today, I spent most of the afternoon cooking. I went to my local organic market where I get grass fed and free range meats, and got a 5 pound bag of grass fed ground beef. I made 5 1 pound meat loaves, with eggs, chopped onion, salt, pepper, garlic powder, tomato sauce. I baked them, cooled them down, wrapped them and put them in the freezer.

Interestingly enough, I didnt have to take an afternoon nap; I didnt have that sinking, cant keep my eyes open moment.
