Making Lemonade [Selective Culling Project - very long term]

I don't think I've ever had biscuits and gravy. 🤔
Make sure you try All versions of it. Ultimate comfort food.
You have your Breakfast, sausage bacon or ham in a peppery white gravy
And Supper with some chicken and biscuit style, veggies optional.
Or your military SHTF style of dry chipped beef in a "cream" gravy served on cheap whitebread toast. 😁

I'm sorry, WHAT????

Imagine Fat and Carbs, all light fluffy, hot and toasted (Biscuits)

Now imagine fat and carbs and milk (liquid protein), warm and silky and mild and creamy (White Gravy)

Now imagine crumbled fat and protein with a peppery bite (sausage), all hot and steamy.

Now combine the fat and protein and pepper (sausage) with the fat and carbs and protein (white gravy) and slather it all over the fat and carbs (biscuits).

Now serve with a big cup of fresh, hot, coffee.

On a cold morning, it is even more classic peasant comfort food than a grilled cheese and tomato soup!

Good stuff
There was a mom and Pop fried chicken place that would use the yesterday leftover chicken for biscuits and gravy. It always sold out in about an hour.

I'm not particularly fond of French cooking, but there is fine reason why a béchamel is considered a "Mother Sauce". Making it is one of the first skills to master when learning to cook. So versatile.

Only a few other skills and you can happily cook for yourself and others w confidence for the rest of your life.

We used to call this “stuff” on a shingle. Never associated it with biscuits and gravy but they are definitely in the same family. Not the same league though 😆
Growing up, we used another "S" word. and cheap white bread.

I don't make it anymore. Too much salt. Its what I imagine salted beef and hardtack was like for sailors and men on the march.
