Making my own potato flakes, anyone know how?

We have a ton of potatoes this year from the garden (first time we ever tried potatoes, and didnt water, weed or touch them... and we have TONS.. what a crop for idiots.) I am slicing and drying some for uses in home made augratin mixes... but I really want to try to figure out a way to make some potato flakes.

Couldnt I just boil and drain them and mash them dry and spread that out in the oven/dehydrator and let it dry and then flake it?

I tried googling a way to do it but I couldnt find anything.

Any other perserving ideas on them would be nice too.

I have canned potatoes and froze them

My family loves hashbrowns for breakfast so this is what I do

Wash, peel (optional)
I have a french fry cutter that I use then I turn the tators around to finish dicing them up.
Blanch them for 5 minutes (I think, need to double check the time)
Spread them out on a tee towel that is on a big rubbermaid lid
Blot all the water out
bag and freeze.

I have even thrown in chopped garden peppers and onions

It is a little work but hey, you got hashbrowns ready to go and they are good to take camping too.
