The easiest way to tell with Polish is to look at the shape of the top hat. Look at those two, their head feathers make a smooth, rounded poofball on top of their heads. The others have crazy, spiky 'dos all over the place, that's a male characteristic. Plus, some of your males have obvious saddle feathers.
