Mallards for Dinner (Warning Graphic Pics)

cipes! Confit of Duck, google it. You take the cut up duck, rub it with spices and salt, weigh it down under a bit of pressure for a day or so, then cook it sloooooooowwwwwlllllyy and gently in rendered duck fat. Sounds gross, but when done the meat is firm, very tasty, and not fatty (yeah, I know it sounds impossible). My original recipe was from a book called "The Frugal Gourmet Cooks with Wine" by Jeff Smith. Best of all, it'll keep very nicely for a week or more in the fridge.-all ready for drop in Holiday Guests.
 
Me and my husband purchased 6 ducks from Tractor Supply this past spring, 2 Pekins and 4 Mallards (which was a mistake, they are loud, messy and unbelievably stupid). With winter fast approaching, the prospect of housing them through a cold northern winter here in Upstate NY is quite daunting. My husband just finished our expanded Chicken coop and run, but just the though of the mess those little feathered fiends will make gives me nightmares. My chickens are relatively easy to keep clean, but with the addition of the ducks I fear what type of mess they will make once they are in with the chickens. So, because I REALY dislike those quacking feather brained fowls from hell, I have convinced my husband that they would make a tasty dinner

. I know pekins are meat ducks, but are mallards any good to eat?
