Thanks geebs!!! I could'nt get a good picture of the boys to show their leg feathering. They are nicely feathered even the girls legs are well feathered. The fuzzy picture is kellog my lap dog

I was wondering if the girls are supposed to have more copper on their backs? They dont have much at all.

Yes poulard... breeding them in a closed flock does tend to darken the eggs up a bit....hatch only the darkest and use roosters from the darkest hatches..

When you get to the neck, wing joint, and knee caps you will cut those joints
when you reach them with the peeling / skinning.

the video is not doing it exactly as I was showned, but it does give a good idea of the process.
 
We have always skinned ours as well. I use the meat for enchiladas or skinless chicken breast dishes etc. If you are wanting the drumsticks for fried chicken though you could leave the skin.

Excellent. Thanx for the info. I feel better going into the New Year equiped w/ this info. I assume I can do the same to ducks?
