Mayonnaise

I too have failed But I figured it out. The first time I made it I put it in a large drinking cup. It worked great. The second time in a smaller cup. Because I didn't like the oil in my good cup & it didn't work. So I tried different things. Like drizzling in the oil, adding all the oil, oil & egg alone, You name it I tired it. But I always used the smaller cup. When I went back to the bigger cup presto. So I would say maybe try a different container.
 
I sure am glad this thread popped up again. Now I want to make mayo. I happen to be out of mayo right now and I have a ton of eggs! All I have is a wire whisk, or a mixer. Does the bowl size really matter? Should I use a small mixing bowl? Dang, I gotta get my eggs to room temp first. Is it ok to use any age egg?

I forgot to mention that I used a stick blender & yes I believe I this instance size does matter. When I use to small of a cup all I got was yellow oil.

I used my food processor cause my stick blender is now used for soap. It takes about two minutes, but I haven't had it not turn out. Since I'm using the food processor and not a stick blender, I slowly drizzle the oil in while it is blending. I'm thinking of infusing the oil with some herbs and maybe roasted garlic for next time.
 
Good suggestion Morgaine, as I, too, put different herbs in mine. Depending on the mood I am in. I have put some horseradish in it too or just some hot sauce when in the mood.
Miss P. I go to all this trouble to make the mayo in this tall narrow glass and then go to all the trouble dipping it and trying to get every smidgen out of the glass to put into a mason jar!! Duh!! I will now start making it directly into the mason jar!!!

I tried twice in the mason jar and all I got was yellow oil. That is why I'm thinking my stick blender isn't fast enough. I haven't tried the regular blender yet but that will be my next step. I hope it works this time. I hate wasting anything. The yellow oil went to the dogs and cats.
 
I tried 3 times this morning - success on the third attemp - but it is a bit to lemony - my fault :)
My first two attempts failed because I did not take into account the smallish eggs I have right now - my girls have only been laying for a month - when I used 1/2 cup of oil we got mayo. So now I just have to perfect my "flavoring" because with free eggs and inexpensive oil - I won't have to buy mayo if I don't want to!
