Mayonnaise

If it is a closed flock and in a run, can i feel safe? I've been downing homemade eggnog all month!
Is this a test that has to be done yearly, monthly, every half year? And can wild birds bring it into a flock of chickens? Just when you have me convinced that I can make my own mayo... *sigh*

I overblended my first batch, I should have stopped it when I heard the blender make the thick blending noise. I couldn't save it so the chickens and the dogs got that. The second batch came out perfect but I put too much salt in it, so I made egg salad and used that batch..mmmm perfect! Now, we don't care for the canola mayo taste, so who makes soy oil? Unless it's not good for ya..

Hmm.. How long must you blend it for? Mine did not thicken up, I read a post saying 30 seconds so I thought that was how long it took, I'm not too sure anymore... It tastes good, just not thick! lol!!!

Great thread, I never thought of making my own mayo but BOY if its that easy.... wow! Mayo is expensive now.

Remember!!!!!!!!!!! The key is to let the oil DRIZZLE into the egg! I use to have to have three hands till a family member suggested a squeeze bottle, now my mayo making is very easy and I have a lot of control with the squeeze bottle. I got it at Wal-Mart in the cosmetic dept. I am sure there are some in kitchen gadgets though.

I will try that! I thought I was doing it slow enough but definitely was not a drizzle.

Thanks cndula, I don't think I did it long enough either.

Still, it was pretty delicious! Would have made a great salad dressing. I mixed it in discount lettuce from the grocery store and gave it to the chickens, they loved it.

Ditto that. I buy Helmans in the big jar, and keep a back-up jar in the pantry!

but I've always been a bit curious about making my own Mayo. I never really understood the process, seems SO simple now!!!
I'm not so terribly afraid of my own eggs since I know their source and handling very personally. It's a risk that I can live with.

Great thread! OLD thread, but great. I came to see if you could use duck eggs to make mayo(thanks vfem!) and decided to post to bump this back to the top for any newbies who have never experienced the glory of homemade mayo
