Just made some last night. My first batch, with whole eggs failed and I'm not sure why. I've never had mayo fail before. Second batch, with yolks, was perfect. I used lemon for the first batch and decided to try organic ACV for the second batch. I've always used fresh lemon juice before but I actually liked the ACV taste better, more like real mayonnaise.
I use a touch of dry mustard powder, salt and pepper for seasoning and made some egg salad, used some smoked paprika in the egg salad. Was out of this world good!
Last week, made real Ceaser salad dressing, same idea except you add some garlic and a few anchovies and Parmesan.. If you've never tried it, you really need to. You really don't taste the anchovies but that's what makes the dressing taste like Ceaser dressing.
 
I had my first failure of a batch last week when I whipped it by hand. I tried to recovery it by using stick blender...separated very badly. Looked on line on how to recover it and it worked.

I put it in my food processor this time, added an egg yolk then while whipping it drizzled in a little bit more oil. It recovered beautifully.
 
had to try this today and this is how i did it in less than 1 minute.

crack 1 egg in to a 1 ltr jug (yoke & white) then stand your stick blender in the jug over the egg yoke then add 1 cup veg oil.
now hold the blender hard on the bottom of the jug and switch on. when you see white in the bottom of the jug (about 3 to 5 seconds) slowly start to lift the blender up out of the oil in the jug. you will see the mayonnaise forming as you lift the blender.
now using the blender blend in any oil that is left around the sides of the jug.

Can anyone tell me what I did wrong? Couldn't find my stick blender, so I used the bullet blender...1 egg, room temp, 1 cup veggie oil, it is very runny. I tried to add another egg, it just made it more yellow

Did I not blend it long enough? Only a few seconds (maybe 30 seconds)....can I save it?

did you drizzle the oil into the egg as you were blending it?..
