Meatless Mondays Recipe--Rice Nut Loaf

I have gotten such good recipes off of here, I thought I should give back. Here is one of our favorite meatless dishes.

Rice Nut Loaf

3c cooked rice
2c shredded cheddar cheese
4 eggs lightly beaten or 2 whole eggs and 4 egg whites
1 medium chopped onion
1c shredded carrots
1/2 c Italian style bread crumbs
1/4c chopped walnuts
1/4c sunflower kernels chopped
1/4c sesame seeds
1/2 tsp salt
1/4 tsp pepper
2 c pasta sauce

Heat oven to 350, combine rice, cheese. Add in onions, carrots, eggs and bread crumbs. Stir in nuts, seeds, salt and Pepper.
Pack into a 9 inch loaf pan coated with cooking spray.
Bake 50-60 minutes or until firm.
Cool in pan.
Meanwhile heat pasta sauce.
Unmold loaf, slice and serve with pasta sauce.
Makes 8 servings.

This is a very filling recipe and may do more than 8 servings for you. We also discussed easy options. Try plain bread crumbs and Asian spices, serve with a hosin type glaze. Or do Mexican spices and salsa on top. Greek style spices and serve with a tzatziki sauce. It could be really open for different flavors.

Broccoli cheese soup
And fettuccine Alfredo
