Meatless recipe exchange

Care to share your favorite meatless recipes? Entrees, sides, desserts, drinks all welcome.
Highly recommend Mark Bitttman's Vegetarian Cookbook. One of our favorite recipes from there is Potatoes Boulangerie:
2 c white beans cooked soft and drained but not dry (canned works), cover with 2-4 potatoes sliced thin, cover with 2 cups vegetarian stock or broth, add dried or fresh thyme, dot with butter, cover with foil, bake 45 minutes at 325, remove foil bake and another 45 min or more. Satisfying, easy to make substitutions, even better leftover.
It's what's for dinner here tonight.

it really is easy, smells great, take liberties with seasonings, add leeks or onions, salt and pepper to taste. We'll have garlic bread with it tonight (Jeff bakes sourdough twice a week, this loaf is out of the oven last night.color me spoiled?)
 
Our family favorite (we eat meat, but love this dish!) Is chickpeas and Tomatoe:

1-2 Can(s) Chickpeas, drained
5 medium tomatoes, chunked
2 tbs minced garlic (less if fresh) or to taste
Olive oil to season pan

Throw everything in pan on medium high heat. Cook till tomatoes are soft and form a sauce like base. Eat over warm rice! SO GOOD AND SIMPLE!
 
One of the staples in our house is egg drop soup. We make it often with vegetable broth, half a brick of ramen noodles, and a couple scallions. We usually have it with a salad or vegetable potstickers.

Meatless chili is also delicious. I make it with navy beans in a bean pot in the oven.
 
would love to see some meatless recipes, not a fan of store bought/factory farmed meat. even though it is are main source of meat (sad face). i much rather raise our own food animals or better yet hunt them (deer is awesome eating) but am getting off topic.

i got a book the other day about sausage making and have a chapter on meatless options i think they look quite cook, one was a roasted corn and black bean sausage. think i am going to give it a try soon and will have to share how it turns out :)
