Hi all, I am looking for a really good Mexican rice recipe. I am not a fan of Mexican food unless it is casa asada or fajitas..beef only. I also do not eat the beans

Anyway, we went to a Mexican rest. on Sat. and it was unbelievably good!!

I think my dislike comes from these wanabee's of fast Mexican food? The rice I had was out of this world and I will eat there every/any chance I get from now on.

But does anyone have a recipe for the rice? I know it may be different in different restaurants but I can't even figure out the basics of what was in it.

Dont know if this recipe will compare cause dont know what the one you had taste like except yummy

This is the one i use give it a try and see how it compares.

Mexican Rice

1 cup white rice (uncooked)
2 (14 ounce) cans chicken broth - I like (Swanson Brand)
1 garlic clove (chopped) 1/2 teaspoon cumin seed or cumin powder
2-3 tablespoons canola oil
1/4 chopped onion
1/4 chopped green bell peppers
1 chopped fresh tomato
7 teaspoons tomato sauce
1 pinch salt and pepper, to taste
1/4 cup frozen peas or 2 grated carrots (optional)
1 pinch salt and pepper, to taste

Crush garlic and cumin together in mocajete.
Add small amount of chicken broth to mocajete.
Place oil in pan. Add rice and cook until lightly browned.
Add onion and bell pepper to pan.
Saute a few minutes, then add the fresh tomatoes and cook a few more minutes.
Add the liquid from the mocajete to the pan with the rest of the chicken broth.Add a small amount of salt and pepper to taste.
Cover and simmer 10-15 minutes, add frozen peas.
Cover and simmer on medium to low flame until liquid is absorbed.

Fay, we went to Cozumel in Mtn. Grove. Excellent!! We went there for lunch and then out for steaks that evening. Steaks were over the top.
