Briana, make sure the birds are brined for at least 12 hours before smoking and then make sure they are completely dry before smoking. When I smoke the chickens I dry them with towels, hang them for a while until they are completely dry, cook them for one hour before starting smoke. A wet bird will result in the smoke not depositing evenly. It will run and result in bitter pockets.

hi all. havent posted much just read everyday.
got rid of my 3 roosters today. gave them to a reel nice family.
It was just getting to ROUGH for the girls
the coop is so quiet you wouild not no we still have 17 girls.
just waiting for eggs now shouild be any day. thanks for all the GREAT info.

Thanks for the pics Krisrose. Makes me want to go to chickenstock again. Next year.... I am officially on vacation. Well, as of 5 pm on Friday. Just been soooo busy to update. My husband and daughter will be camping at the fair. She has pigs this year,(her last) They just loaded and took them up. I am sure they will make weight. Just hoping no one is to heavy. Had the dog show yesterday. It was long and sunny. hot hot hot.... We had 48 kids this year!!! That is so great.

Vickie2x2... One of the kids from my 4-H group took my BLRW roo and a hen. The show is tomorrow. I sure hope they do well. It is her first time showing chickens, and I offered her to show mine so she could see if she liked it before investing. But they ended up getting some chickens anyway. They are just taking the BLRW for a breeding pair. I had a horrible hatch with the eggs I purchased. I was so sad. I 27 alive and moving on lockdown. and had only 5 hatch. 1 of those died and 1 of them I put down as it had stuff hanging out of it. So, I got one blue orp, one vorwerk, and one BLRW. I am pretty sure it was a humidity issue. I think it was to humid. The hydrometer read 75-80% but I think it was off. I have 3 of them now and they all read something different. I think the ole fashioned one is the most accurate. One of the digitals reads 20% and the other reads 55-60%. the old fashioned one reads 35-40%. I have some of my barnyard mix in there now. 22, and hoping some hatch. They are due to hatch on the 30. I will get more eggs when I can figure this out. The chicks are so cute. They will be going to the nursery soon in the coop.

I've got pickles in the canner right now. Get to do baked goods later. My rag rug is done. Almost ready for the fair. DD is taking our endurance horse into her first flat show (she was a jumper when I bought her). We'll have to see how much Izzie likes placidly being led around the arena for leadline and pee-wee showmanship!

which fair are you at? Livingston county's is this week and that is where we are. Dog show was yesterday and today we got our animals up to the fair too.

Emily's pig is a jumper. Jumped out of the washrack and it's pen. It is in "jail" now, with hog paneling on the top.

i am ready to go and shoot the pig at home. It is jumping over the fence cause it is lonely. Jon put up electic fence and it is getting zapped and still jumping. It is scaring the chickens and ducks. and pooping in front of my garage door!!!!!
