Hmm. On a positive note today, looks like saturday works better for my sister's grad party, so i guess the well expense and whatnot was a blessing in disguise. Moving it to sat. will insure that more people are able to come. (see, staying positive!)
I opted to make the cake, i couldn't see her spending so much on one of those wimpy bakery cakes. The only hangup i have is the frosting...... she's not a frosting girl, but likes the canned better than the homemade buttercream or the stuff on the bakery cakes..................
Has anyone tried the choc version of the cook's country cream cheese frosting? Would it hold up OK in the heat? I also thought about a stabilized whipped cream, she adores whip cream, but the cake is going to be the super chocolat-y recipe that i posted a while back, with butterscotch filling. I have also seen a pour-on butterscotch frosting recipe from taste of the south, but that one required two pans of stuff cooking at once, and i know i would muck it up when under stress, so if anyone has a *simple* version.............?
I am going to try to make this something that will be talked about, she is making this with me so it will not only be bonding time for us, but a way to showcase her skills, too. She has a potential mother-in-law attending, so if done well this will be a nudge in the right direction!
